Ingredients:
- 1 box elbow macaroni (16 oz)
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 2 cups milk
- 1 ½ cups shredded cheddar cheese
- ½ cup Wild Bill’s Beer Cheese
- Salt & pepper to taste
- Optional: chopped scallions, bacon crumbles, or hot sauce for topping
Instructions:
- Cook pasta according to box instructions; drain and set aside.
- In a large saucepan, melt butter over medium heat. Whisk in flour to make a roux; cook 1–2 minutes.
- Slowly whisk in milk until smooth and simmering.
- Stir in cheddar cheese and Wild Bill’s Beer Cheese until melted.
- Add pasta and stir to coat evenly.
- Season with salt and pepper. Top with bacon or scallions if desired.
